Crispy Fried Chicken Wings with Oh My Glaze Buffalo Sauce
Description
For the Wings:
- - 1kg chicken wings (split at joints, tips removed)
- - 1 tsp salt
- - 1 tsp black pepper
- - 1 tsp garlic powder
- - 1 tsp smoked paprika
- - 1 cup buttermilk (or 250ml milk + 1 tbsp lemon juice)
- - 1 ½ cups plain flour
- - ½ cup cornflour (for extra crisp)
- - Vegetable oil, for frying
To Glaze:
- - 100ml Oh My Glaze Buffalo Sauce
- - Optional: 1 tbsp butter (for a richer glaze)

Marinate (optional but recommended):
Toss wings in buttermilk, salt, pepper, garlic powder and paprika. Let sit for 30 mins to overnight in the fridge.
Prep for Frying:
In a bowl, mix plain flour and cornflour.
Remove wings from marinade, letting excess drip off, then dredge in the flour mix. Press the coating on for max crisp.
Fry:
Heat oil to 175°C (350°F). Fry wings in batches for 8–10 mins until golden, crisp and cooked through. Drain on wire rack or kitchen paper.
Sauce ‘Em Up:
Gently warm the Oh My Glaze Buffalo Sauce in a pan. Add butter if you want it extra glossy and rich.
Toss the hot wings in the sauce until fully coated.
